Meal Prep: Roasted Chicken and Veggies

Decided to prepare my meal in advance so I can have controlled portions of what I eat. Lately been binge-eating a lot and it was difficult to watch my food intake because I was having so much fun or I was really hungry. 

I need a grab and go lunch so I prepared this recipe, roasted chicken and veggies. A quick and easy, healthy, no- fuss meal.

What you need:

• Breast chicken
• Brocolli
• Cauliflower
• Marble potatoes
• White onions
• Garlic
• Tomatoes
• Lemon
• Pink salt
• Garlic powder
• Chili flakes
• Olive oil
• Parsley
• Italian seasoning

What to do:

• Preheat oven
• Line oven pan with foil
• Slice chicken breast into cubes
• Slice all veggies and lay on the pan
• Pour olive oil and dry ingredients
• Mix on the pan
• Roast for 15 to 20 minutes until veggies are charred and potatoes are soft.
• Ready to serve

Mindfulness and morning ritual

Every so often we get caught in the hustle and bustle of daily life. We wake up in the morning and rush to fix ourselves, get coffee and commute to work. But in the flow of accomplishing these tasks, we sometimes find ourselves losing contact in the present moment resulting in being unaware of our feelings, emotional, mental and physical well-being.

Snorkeling in Miniloc Island, El Nido

Snorkeling is probably one of the highlights when we were in El Nido. Imagine the excitement I had the moment we docked at Miniloc Island Resort. My mind was mentally jumping for joy! The rich blue water was so clear and inviting that you’d want to jump in and swim with the fish!

Native tray with modern vibe

I love collecting native baskets and hand woven products. I feel like they give my multi-themed room warmth and a touch of something Filipino. What’s more appealing are the textures it display that makes you want to put your hands on and feel the materials.

Some native products that I have such as baskets, trays, bags, mats which can be locally sourced here in Antique are cheap but of good and export-quality kind. Buying  from OTOP (one town one product)  centers  support local artisans too, so it’s equally worth having.

Here’s a simple and quick diy project I did to spruce up some vibes due to boredom during my flu confinement at home.

Materials:
Nito tray bought for only 200php
Brush
Poster or acrylic paint
Topcoat spray paint

The material is NITO

Compared to other local baskets, this particular material is quite expensive because this requires a much intricate weaving process. 200php is cheap but if compared to the banig tray which is only 50-120-it’s pricey because of the craftmanship.

See what color can do to a boring brown tray. I specially love the wave details which the color gave some justice. It looks like it’s got some modern twist to its native feel.

I know my ‘drawings’ aren’t really that good cos they are just stick people and looks drawn by a kid but I find the delight of drawing it anyway cos I love stick people and I enjoy dressing them up and putting on some color. Haha! August is lining with a lot of birthdays and here are some that I made…Not really post-worthy. Haha!
